This is an elegant and easy breakfast item. All egg lovers enjoy this special treat. We make this breakfast item per person at Bloomsbury Inn, so the measurements are dependent upon how many people and ramekin size. Serving Size 1.
Spinach, broken into pieces
Cherry Tomatoes, cut in ½
Feta Cheese, crumbled
1 TBS Salsa Verde, love World Table brand
2 TBS Half-and-half Cream
Spray each ramekin with olive oil spray/cooking spray. Tear spinach into pieces and place in ramekin. Top with mushrooms. Add sliced cherry tomatoes. Crumble on Feta Cheese. Salt/Season to taste. For seasoning I use a green herb blend or something similar or as you prefer. Carefully break two eggs over the mix. Top the eggs with two tablespoons of cream…make sure cream is poured over the egg yolk to prevent that “dry” look when cooked.
Bake at 325 degrees for 12-15 minutes. Allow to rest 10 minutes before serving – this is critical as eggs continue to firm while resting. Enjoy…serve with a breakfast meat and bread for a great breakfast option.
